Who Is Mirdiyar Mirkhalikov?

My name is Mirdiyar Mirkhalikov, and I grew up watching my grandmother cook without measurements, without timers, and without recipes — only memory, instinct, and a lifetime of practice handed down from her own mother before her. Her kitchen smelled of toasted coriander, rendered fat tail, and woodsmoke from a clay tandoor that never seemed to go cold. When she passed, I realized how much of that world lived nowhere but inside her.

This archive began as a personal act of grief and urgency. I started calling relatives across Kazakhstan, Kyrgyzstan, and southern Siberia — aunts in their eighties, distant cousins who still kept yurts in the summer, families in small auls who had never thought to write anything down because the knowledge had always lived in hands, not paper. I recorded conversations. I filmed cooking sessions. I transcribed and tested and cross-referenced. What you find here is the result of more than a decade of that work.

I want to be completely transparent about what this project is and what it is not. mirdiyarmirkhalikov is not a commercial endeavor. There is no cookbook deal I am building toward, no restaurant concept waiting in the wings, no brand partnership behind these pages. I am a private individual with a profession unrelated to food who became obsessed, in the most wholesome sense of the word, with the idea that Kazakh culinary heritage deserved a careful, respectful, and permanent record before the last generation who carries it firsthand is gone.

Authenticity is the only standard I hold myself to. When I publish a recipe for beshbarmak, it is not the simplified version adapted for a Western pantry. When I document quyrdaq, it includes the parts of the animal that modern food media tends to quietly omit. I believe that softening a tradition to make it more palatable is itself a form of erasure — and that readers who come here deserve the full, unromanticized truth of how the steppe kitchen actually worked and still works today.

Cultural preservation is also, at its core, a political act. Nomadic Kazakh foodways were disrupted by collectivization, by sedentarization policies, by the slow pressure of Soviet-era standardization that replaced regional variation with a single homogenized "Kazakh dish." Part of what this archive tries to do is restore that regional complexity — to acknowledge that the food of the Mangystau coast is not the food of the Altai foothills, and that both deserve to be seen as distinct, valuable, and alive.
